A skillet recipe offers a faster alternative to traditional zucchini lasagna. The dish replaces labor-intensive noodle preparation with a simpler cooking method. It was developed by a parent with limited time for meal prep. This approach eliminates the need to slice zucchini into long, thin planks, salt each individual plank, and wipe each plank before layering. Instead, the recipe streamlines the process by using crosswise-sliced zucchini, making it a dump-and-go skillet meal that captures all the favorite flavors in a much quicker and easier format.
The recipe requires 15 minutes of active cooking and yields four servings. Key ingredients include 1 pound of ground turkey and three medium zucchini. The zucchini is sliced into thin, crosswise pieces, specifically â…› inch thick, and weighs about 20 ounces total. The recipe uses 2 tablespoons of extra-virgin olive oil for cooking.
The cooking process begins by heating olive oil in a large skillet. Ground turkey is added and cooked until mostly done, breaking it into small pieces with a wooden spoon. Sliced zucchini and a portion of the salt, 1½ teaspoons of Diamond Crystal or 1 teaspoon of Morton kosher salt, are then incorporated into the skillet. The mixture is cooked over high heat until the meat is no longer pink and the zucchini is tender, taking 6 to 8 minutes. Freshly ground black pepper is also used during this step.
The heat is reduced to medium. A 14.5-ounce can of tomato sauce, Italian seasoning, garlic powder, onion powder, and the remaining salt, ¼ teaspoon of Diamond Crystal or Morton kosher salt, are stirred in. Half of the basil leaves, totaling ½ cup of thinly sliced basil, are also added. The mixture is tasted and seasoned further if needed. Dollops of 4 ounces of whole-milk ricotta cheese, about ½ cup, are swirled into the pan, followed by a sprinkle of 4 ounces of coarsely grated mozzarella, about ¾ cup.
The heat is lowered to low, and the pan is covered. It cooks for about 4 minutes, or until the mozzarella has melted. The dish is finished by topping it with the remaining basil leaves and optional crushed red pepper flakes before serving. This method ensures a quick, flavorful meal without the traditional lasagna’s labor-intensive steps.
