A butternut squash pasta with sausage and dates creates a harmony of sweet, savory, and umami notes through a simple cooking approach. The process starts by cooking 1 medium butternut squash (1½–2 lb.), peeled, halved, seeds removed, cut into 1″ pieces (about 6 cups), in a large pot of boiling salted water until very tender, 12–14 minutes. Using a slotted spoon, transfer squash to a medium bowl. In the same pan, Italian sausage is browned in olive oil before being removed, leaving behind its rendered fat. The dates are then caramelized in that fat and set aside on a plate.
The squash returns to the pan, where it cooks with 6 garlic cloves, thinly sliced, ½ tsp. freshly ground pepper, ½ tsp. Diamond Crystal or ¼ tsp. Morton kosher salt, and reserved squash until it breaks down into a thick, rustic paste that absorbs the browned bits.
While the squash simmers, short tube pasta, such as rigatoni, boils in salted water until very al dente, about 3 minutes less than package directions (it will finish cooking in sauce), with some of the starchy cooking liquid reserved. The squash paste is then folded into the pasta along with the sausage, caramelized dates, and reserved pasta water, simmering until the noodles reach perfect tenderness. A splash of sherry or balsamic vinegar finishes the dish, balancing flavors with acidity.

The technique skips heavy cream or cheese entirely, yet still produces a velvety, textured sauce. The dates contribute a caramelized sweetness that complements the savory sausage and the earthy squash, resulting in a well-rounded meal. The method depends on controlled heat, medium-high for browning, medium-low for caramelization, to develop depth without overpowering the ingredients.
The final adjustment, adding vinegar, is a classic Italian touch, cutting through the richness of the sauce. The steps move efficiently, with multiple tasks able to proceed simultaneously.
